If you're a meatball lover, you're going to want to try this recipe for Swedish meatballs with grape jelly and Sweet Baby Ray's sauce. It may sound like an unusual combination, but trust us – it works! The grape jelly adds a subtle sweetness to the meatballs, while the Sweet Baby Ray's sauce gives them a satisfying tanginess.
Ingredients
For the meatballs, you'll need:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/2 onion, finely chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp allspice
- 1/4 cup grape jelly
For the sauce, you'll need:
- 1 cup beef broth
- 1/2 cup heavy cream
- 1/4 cup Sweet Baby Ray's barbecue sauce
- 1 tbsp cornstarch
- 1 tbsp water
Directions
1. Preheat your oven to 350°F.
2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, salt, pepper, garlic powder, onion powder, paprika, allspice, and grape jelly. Use your hands to mix everything together until well combined.
3. Roll the mixture into small meatballs, about 1 inch in diameter.
4. Heat a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
5. Transfer the meatballs to a baking dish and bake for 15-20 minutes, or until cooked through.
6. While the meatballs are baking, make the sauce. In a small saucepan, whisk together the beef broth, heavy cream, and Sweet Baby Ray's sauce. Bring the mixture to a simmer.
7. In a small bowl, whisk together the cornstarch and water until smooth. Add the mixture to the saucepan and whisk to combine. Cook for 2-3 minutes, or until the sauce has thickened.
8. Serve the meatballs with the sauce drizzled over the top.
